Description
Water activity (aW) is defined as the ratio of relative humidity inside and outside a material to describe the moisture equilibrium. It provides a means to translate material specific moisture content to a universal scale for monitoring and controlling this critical safety attribute. Samples above the upper specification limit are at risk of mold reproduction, while samples below the lower limit represent product with a different subjective experience with regards to burn temperature.
In this assessment a series of questions based on current best methodology and standards (ASTM D8196-18) will be asked to catalogue and assess your current abilities to do consistent and accurate water activity testing.
